All of the parking on Bank of America Stadium property is assigned to season ticket holders.  However, tailgating is allowed in the lots surrounding the stadium, where parking can run anywhere from $5 to $25.  Check the rules of the lot you are about to park in; some do not allow open flames or alcohol.

There is also plenty to do in the Uptown area on game day; that area is within a mile of the stadium.

As for the Charlotte Coliseum, there is nothing around it, so if you want some beers bring a few and drink them at your car.  It is probably best to avoid being seen by arena security if you are involved in this activity.
