Blackened Catfish

A must for a Cajun tailgate, blackened catfish is easy and inexpensive to make, requiring only a few ingredients and not much time. The result of your labor will be a spicy and greasy piece of Southern delicacy that is sure to be a hit at your tailgate.

Time Required:  30 minutes

Skill Required:  Minimal skills needed

Ingredients:

  • Catfish filets

  • Butter (not margarine)

  • Blackened seasoning (Cajun seasoning will do, but look specifically for "blackened seasoning")

Steps:

  • Melt butter in a skillet. Use enough to coat the fish.

  • Add a significant amount of blackened seasoning, so that the fish will be coated when placed in the skillet

  • Coat the first side and flip the fish. Add seasoning and butter if needed

  • Cook for about five minutes on each side

  • Serve hot; this goes great with cornbread
