Grilled Chicken Breast Marinades

Chicken breasts are great on the grill; they are especially good if you marinate them overnight.

There are about a million different ways to marinate chicken breast.  For all of them, the basic rules are the same:  marinate the chicken overnight, and cook the breasts carefully to avoid burning the chicken.  A zip-lock bag works best for marinating, since it allows the entire breast to soak in the liquid and can be brought directly to the tailgate.

Here are a few of johnnyroadtrip.com's favorite chicken breast marinades.  For each, make enough to ensure that all your chicken breasts can soak properly in the bag.  When serving breasts, you may choose to sauté some onions and/or peppers, depending on the marinade you use.  These marinades can also be used for chicken parts.

Time Required:  Less than one hour

Skill Required:  Minimal cooking skills needed

BARBECUED CHICKEN BREAST

  • Start with barbecue sauce, the main ingredient.  Add salt, pepper, garlic, onion powder, and a small amount of Worcestershire Sauce.  Finally, add a bit of mild olive oil (or vegetable oil), which will help keep the chicken moist when grilling.  You can also add Old Bay seasoning to this marinade.

When grilling, brush the breasts with barbecue sauce just before they are done (NEVER use leftover marinade!).

SOUTHWEST CHICKEN BREAST

  • Combine Mexican or Southwest seasoning with equal parts oil and water.  Add some salt, pepper, garlic, and onion powder as well.

BLACKENED CHICKEN BREAST

  • Combine Cajun seasoning with oil to form a light paste.  Add some salt, pepper, garlic, and onion powder.  The chicken should be coated with the paste when grilling.

TERIYAKI CHICKEN BREAST

  • Combine equal parts teriyaki sauce and water.  Then add a lesser amount of olive oil.

LEMON PEPPER CHICKEN BREAST

  • Combine lemon juice and olive oil (about one lemon per half cup of oil).  Add black pepper, preferably freshly ground.

BUFFALO CHICKEN BREAST

  • Marinate chicken breasts in buffalo wing sauce.  Serve with bleu cheese.

ITALIAN CHICKEN BREAST

  • Simply marinate your chicken breasts in Italian salad dressing.

JERK CHICKEN BREAST

  • It is possible to make jerk marinade from scratch; we recommend buying jerk marinade, however, as it contains seemingly hundreds of ingredients.  Simply marinate the breasts and grill.

"NUDE" CHICKEN BREAST

  • For chicken breasts straight-up, don't use a marinade.  Simply grill them, sprinkling salt, pepper, and garlic while cooking.  Just before they are done, brush with barbecue sauce if desired.
